In high school, I would wake up every morning to my mom having a meal ready for my brother and I. With coming to college, I have now adjusted to the unspoiled lifestyle. Not wanting to walk all the way to the dining halls, I have taken it upon myself to oversee meal prep. With limited resources and not a lot of places to cook or prepare, I did serious research for quick healthy breakfast options. I don’t know about you, but cereal isn’t enough to start my day.
My answer to this? Overnight oats. This genius meal has been recently gaining a lot of popularity on social media sites. Pinterest and bloggers are writing about different recipes across the web, as well as the creation of many YouTube videos about bakers’ favorite mixes. All you need to do is make it the night before and leave it in the fridge until the morning. Then, the next day just grab a spoon, and you’re good to go! Overnight oats are a great, healthy, and easy way to start your day. Plus, there are so many different options and creations that you can customize the recipe to your likes!
For a fun and cute option, you can make the recipe in mason jars (which I love, just got new blue ones!) or simply use Tupperware.
First, start with ½ cup of oats, ½ cup of your choice of milk or water, and a spoonful of yogurt if you like it a little thicker. Remember that you can add more milk or water the next morning to make sure you get the consistency that you want.
Next, add ¼ cup chia seeds. I love chia seed because they are very rich in omega-3 fatty acids, fiber, antioxidants, iron, and calcium.
This quick start will be your base! Your base is the start of endless possibilities.
Possible Additions to your Base:
Blueberry Almond Quick Oats: Honey, blueberries, almonds
Peanut Butter Oatmeal Cookie Quick Oats: Peanut butter, cinnamon, honey. In the morning: sliced banana
Apple Pie Quick Oats: Sliced apples, cinnamon, and nutmeg
Banana Split Quick Oats: Banana, strawberry, and pineapple slices. Top with peanuts or a spoonful of peanut butter in the morning. Sprinkle cocoa powder on top.
Pumpkin Quick Oats: Pumpkin puree, and a drop of vanilla extract. Top with roasted pecans and some maple syrup
Coconut Cream Pie Quick Oats: Lemon zest, shredded coconut
Mocha Quick Oats: A half cup of coffee, cinnamon, and cocoa powder
