Fall means sweet treats and putting on winter weight, right? How about the sweets without the weight? By making your own candy at home you are totally in control of what ingredients go into your favorite treats. Recipes like the following for homemade peanut butter cups are so simple and lack the added sugar and artificial ingredients of store bought candy. Now you can eat candy in confidence. Follow the recipe below for a more healthful homemade treat that has zero spooky ingredients. Happy Halloween!
Peanut Butter Cups:
Makes 12-15 cups
Ingredients:
Pour chocolate chips into a small pan and heat on the stove on low heat. Add 1T of coconut oil into the chocolate. When chocolate is smooth and pourable, spoon a thin layer into each ramekin. Swirl the chocolate to ensure the whole bottom is coated. Freeze for 10 minutes. Put 1/3c peanut butter in a microwave save dish. Microwave for 30-40 seconds. Remove ramekins from freezer and add the peanut butter layer to the cups. Freeze for 30 minutes. Remove from freezer and add a top layer of chocolate. While this layer is still slightly wet, add a sprinkle of table salt of sea salt to the tops. Freeze for 20 minutes, pop the cups out of the plastic, and serve!

- 1T coconut oil
- 1/3 c all natural creamy peanut butter (preferably just peanuts)
- Salt
- 12-15, 2oz ramekins
