Food and Nutrition-Related Electives Fall 2017
AMS/IES 278 Food Systems and Food Studies (4 credits)
Fall 2017 MW 10:05-11:50
Food is elemental to our lives. From farm to table, every meal is embedded with layered individual, local, global, intercultural, and environmental meaning. With every bite we cut across social, political, economic, geographical, technological, cultural, chemical and biological contexts. This course introduces students to food from an interdisciplinary perspective building on the concepts underlying food systems and food studies. We will focus on food from a systems-based perspective, examine the origins, implications, and practices of our current food system, and explore new approaches to sustainable agriculture and resilient food systems. Topics to be addressed include: agricultural production of food, global food chains, local food shed, industrial agriculture, the Green Revolution, US farm policy, food and climate change, sustainable agriculture, agroecology, organic food, local food, food labeling issues, and food sovereignty and security.

This course provides an environmental history of food examining the origins and impact of our global food system. Beginning in prehistory, students will examine the emergence of fire, cooking and the impact of the agricultural revolution and then explore the environmental, economic, social, and cultural implications of selected foods and food types as they spread across the globe. Selected foods and themes could include: maize and the Columbian Exchange; coffee, tea and empire; sugar, slavery and capitalism; bread and revolution; potatoes and immigration; pork and industrialization, chocolate and leisure; bananas and migrant labor; Coca Cola and globalization; Chinese food and ethnicity. The goal is to understand food as both a biological necessity and a historial force linked to empire, markets, and issues of belonging and identity.

Summer Health Staff Positions
Blue Lake Fine Arts Camp is currently hiring Health Staff and Registered Nurses for our 2017 season (June 18 - August 20) and we are searching for motivated health-oriented individuals to fill positions. Blue Lake Fine Arts Camp is a non-profit summer school of the arts serving more than 5,400 junior high and high school students each season. In 2017 Blue Lake will be opening a new Health Lodge facility, which will operate 24 hours a day to serve a camp community of over 2,000 at a time.
Positions are available for registered nurses and undergraduate health majors (e.g. Nursing, Pre-Med, Physician Assistant, Psychology, Physical Therapy, Music Therapy, Sports Medicine, Health Sciences, etc.) as well as those with Standard First Aid & CPR or greater certifications.
Their health staff provides a variety of services including basic first aid, medication management/distribution, and emergency medical care. The Blue Lake health team is typically comprised of registered nurses, emergency responders, and health majors with Standard First-Aid/CPR training. They support a diversified camp population of youth and college-aged staff as well as university/secondary teachers and their families. Health Staff receive practical, hands-on experience with short-term patient care, documentation, triage, and basic diagnostics. They also receive valuable training in team building and problem solving.

Power Ball Recipe (For National Nutrition Month Pass-outs)
1 cup dry oatmeal, I prefer old fashioned, but you can use quick oats too
2/3 cup coconut flakes sweetened or plain, we used sweetened
1/2 cup nut butter, we used sun butter made from ground sunflowers
1/2 cup ground flax seed
1/3 cup honey, you may want to add an extra tablespoon too get everything mixed
1/2 mini semi sweet choc chips
1 tsp vanilla
Mix ingredients together and roll into 1in balls.

M.U.V.E. - Miami University Vegan Eaters
